Homemade Onion Powder

Onions are sliced into fine rings and fully dehydrated at a moderate temperature. The ground powder has a mild, slightly sweet onion flavor and is very versatile. Homemade, it contains no fillers or anti-caking agents.
Instructions
Preparation
20 min.Peel onions and cut off the root and stem ends. Slice into uniform rings of 3-4 mm thickness using a sharp knife or mandoline. Separate the rings and lay them side by side on the dehydrator trays.
Dehydrating
10-14 hoursSet the dehydrator to 55-65 °C and dry the onions until they are completely brittle and dry. Rotate the trays halfway through to ensure even drying.
Grinding and Storing
10 min.Grind completely cooled onion chips in small batches in a spice grinder or high-performance blender until fine. Sift through a fine sieve. Store in dry, airtight containers at room temperature for up to 12 months.
Pro Tip
Yellow onions produce a robust powder, white onions a milder one. Shallots work wonderfully for a sweet onion powder.
