Ripe tomatoes are sliced thinly and dehydrated at a gentle temperature into crispy chips. The ground tomato powder concentrates the full umami flavor and is a powerful flavor enhancer. It is excellent for rubs, sauces, and soups.

Ingredients(for 1 kg)

Ripe beefsteak or Roma tomatoes1000 g
Sea salt5 g
Citric acid (optional, for color preservation)2 g

Preparation

Wash tomatoes, remove the stem end and cut into uniform slices of 4-5 mm. Optionally sprinkle with a little sea salt and citric acid to draw out moisture and preserve the red color.

Dehydrating

14-20 hours

Spread tomato slices on dehydrator trays lined with parchment paper. Set the dehydrator to 55-65 °C. Dry until the slices are completely dry, brittle and crackly with no soft spots remaining.

Grinding

10 min.

Grind completely cooled tomato chips into a fine powder using a coffee grinder or high-performance blender. Immediately store in an airtight container with a desiccant as the powder is very sensitive to moisture.

Pro Tip

Beefsteak or Roma tomatoes work best as they contain less water. The finished powder is highly hygroscopic and must be stored in an airtight container.
