Firm tofu is pressed, cut into strips and marinated in a sweet teriyaki marinade. Dehydrating gives the tofu a chewy, meat-like texture with a caramel-like flavor. A popular vegan snack with Japanese flavors.

Ingredients(for 1 kg)

Soy sauce100 ml
Mirin50 ml
Brown sugar30 g
Sesame oil15 ml
Garlic powder6 g
Ginger powder5 g
Rice vinegar20 ml

Instructions

Pressing tofu

1-2 hours

Remove firm tofu from packaging, wrap in kitchen towels and weigh down with a heavy object to remove excess water.

Marinating

4-8 hours

Cut tofu into approximately 6 mm thick strips, prepare teriyaki marinade from all ingredients and fully submerge tofu. Marinate in the refrigerator.

Dehydrating

8-10 hours

Carefully drain tofu strips, place on dehydrator trays and dehydrate at 70 °C. Flip once halfway through drying time.

Quality check

5 minutes

Finished strips should be dry, dark brown and slightly crisp when bent, but not break. If needed, dehydrate for another 1-2 hours.

Pro Tip

The longer the tofu is pressed before marinating, the more marinade it can absorb and the more intense the flavor will be.
