Thai Satay Marinade Peanut-Coconut Milk

A creamy and spicy Thai marinade with peanut and coconut milk that gives meat skewers an authentic Southeast Asian flavor.

Instructions
Prepare aromatics
4 MinutenPeel and finely grate garlic and ginger. Squeeze lime and set aside the juice.
Mix peanut base
3 MinutenStir peanut butter, coconut milk and red curry paste in a bowl until a smooth and creamy mixture forms.
Complete marinade
3 MinutenAdd soy sauce, lime juice, brown sugar, grated garlic and ginger to the peanut base and mix well. Adjust consistency with a little water if needed.
Marinate and grill
2 Stunden (Ruhezeit) + 8 Minuten GrillenCoat meat strips in the satay marinade, cover and refrigerate for at least 2 hours. Then thread onto skewers and grill over direct heat. Serve remaining marinade as a dip.
Pro Tip
Use crunchy peanut butter without added sugar and shake the coconut milk can well so the fat distributes evenly. A splash of fish sauce makes the marinade even more authentic.
