Thai Satay Marinade Peanut-Coconut Milk

A creamy and spicy Thai marinade with peanut and coconut milk that gives meat skewers an authentic Southeast Asian flavor.

Ingredients(for 0.5 kg)

Coconut milk200 ml
Creamy peanut butter150 g
Soy sauce60 ml
Fresh lime juice40 ml
Red curry paste20 g
Brown sugar15 g
Grated garlic10 g
Fresh ginger grated10 g

Instructions

Prepare aromatics

Peel and finely grate garlic and ginger. Squeeze lime and set aside the juice.

Mix peanut base

3 Minuten

Stir peanut butter, coconut milk and red curry paste in a bowl until a smooth and creamy mixture forms.

Complete marinade

3 Minuten

Add soy sauce, lime juice, brown sugar, grated garlic and ginger to the peanut base and mix well. Adjust consistency with a little water if needed.

Marinate and grill

2 Stunden (Ruhezeit) + 8 Minuten Grillen

Coat meat strips in the satay marinade, cover and refrigerate for at least 2 hours. Then thread onto skewers and grill over direct heat. Serve remaining marinade as a dip.

Pro Tip

Use crunchy peanut butter without added sugar and shake the coconut milk can well so the fat distributes evenly. A splash of fish sauce makes the marinade even more authentic.
