An aromatic Thai marinade of lemongrass, ginger, coriander and coconut milk makes the chicken particularly juicy and tender. The mild apple smoke complements the fresh citrus and herb notes without overpowering them. Perfect for chicken breasts or thighs.

Lemongrass finely chopped25 g
Fresh ginger grated15 g
Coconut milk80 ml
Fish sauce25 ml
Lime juice20 ml
Garlic pressed10 g
Brown sugar8 g
Fresh coriander chopped10 g

Preparing Marinade & Marinating

15 min + 4–12 hrs

Combine all marinade ingredients. Place chicken in the marinade and let it marinate covered in the refrigerator for at least 4 hours.

Remove chicken from marinade, drain and remove lemongrass pieces. Lightly pat surface dry. Preheat smoker to 115–130 °C and add apple wood.

Smoking

2.5–3 hrs

Smoke chicken until internal temperature reaches 74–76 °C. Optional: place fresh lemongrass stalks on the smoking chips for more intense flavor.

Resting

10 min

Let chicken rest covered for 10 minutes. Drizzle with fresh lime juice and serve with coriander leaves.

Place fresh lemongrass stalks directly on the coals or smoking chips – the essential oil vapors significantly intensify the Asian aroma in the smoker.
