Ingredients(for 1 kg)

Raw shrimp (shell-on)1000 g
Lemongrass (finely chopped)25 g
Ginger (freshly grated)20 g
Red chili pepper (chopped)10 g
Fish sauce30 ml
Lime juice40 ml
Coconut oil (melted)25 ml
Brown sugar10 g

Instructions

Prepare marinade

Finely chop lemongrass, ginger, and chili. Mix with fish sauce, lime juice, coconut oil, and brown sugar to form a marinade.

Marinating

1-2 hrs.

Wash shrimp, pat dry, and place in the marinade. Cover and marinate in the refrigerator for 1-2 hours. Acclimatize at room temperature for 15 minutes before smoking.

Smoking

20-30 min.

Preheat smoker to 110-120 °C. Remove shrimp from marinade, drain, and smoke on the grate until core temperature reaches 63-65 °C.

Serving

5 min.

Serve smoked shrimp with fresh cilantro, lime wedges, and a sweet chili sauce dip. Jasmine rice or glass noodles pair well.

Pro Tip

Fresh lemongrass makes a big difference compared to dried. Finely chop or lightly bruise the white part of the stalk with a meat mallet to release the essential oils.
