Sticky Maple Syrup Soy BBQ Glaze

A sticky-sweet glaze made from maple syrup and soy that caramelizes into a shiny caramel crust when grilled.
Ingredients(for 0.5 kg)
Maple Syrup200 ml
Soy Sauce120 ml
Brown Sugar80 g
Rice Vinegar60 ml
Garlic (pressed)15 g
Fresh Ginger (grated)15 g
Cornstarch10 g

Mixing Ingredients
3 MinutenCombine maple syrup, soy sauce, brown sugar and rice vinegar in a pot. Add garlic and ginger.

Reducing
12 MinutenBring the mixture to a boil over medium heat while stirring occasionally and reduce for 10 minutes until slightly thickened.

Thickening
5 MinutenMix cornstarch with 2 tbsp cold water and stir into the simmering glaze. Stir for another 3 minutes until the glaze is thick and glossy.
Pro Tip
For extra depth add a teaspoon of smoked paprika – this gives the sweet glaze a spicy smoky note.
