Tender tofu glazed with sweet teriyaki sauce smoked over cherrywood for an Asian-inspired smokehouse experience.

Ingredients(for 0.5 kg)

Firm Tofu400 g
Teriyaki Sauce100 ml
Mirin30 ml
Fresh Ginger grated15 g
Honey20 g
Sesame Seeds10 g

Instructions

Preparation

12 Std.

Press tofu dry and cut into uniform blocks of about 3x5 cm. Mix teriyaki sauce, mirin, ginger and honey and marinate tofu for 12 hours.

Drying

30 Min.

Drain tofu and reserve remaining marinade. Dry tofu on a wire rack for 30 minutes until the surface is slightly dried out.

Smoking

1,5 Std.

Bring smoker to 110-125°C with cherry and applewood chips. Smoke tofu for 1.5 hours, turning after 45 minutes.

Glazing

20 Min.

During the last 20 minutes, brush tofu with reserved marinade every 5 minutes and finish by sprinkling with sesame seeds.

Serving

5 Min.

Remove tofu from smoker and let rest briefly. Serve with rice and spring onions.

Pro Tip

Brush the tofu with remaining teriyaki sauce several times during the last 20 minutes of smoking to create a glossy glaze.
