Traditional tempeh is marinated in a spicy Indonesian marinade and hot-smoked for a hearty, smoky flavor experience.

Ingredients(for 0.5 kg)

Tempeh400 g
Kecap Manis (Sweet Soy Sauce)60 ml
Sambal Oelek20 g
Fresh Grated Ginger15 g
Garlic4 Zehen
Coconut Milk50 ml

Instructions

Blanching

15 Min.

Cut tempeh into finger-thick slices. Blanch in lightly salted water for 5 minutes, remove and allow to cool completely.

Marinating

3 Std.

Mix kecap manis, sambal oelek, grated ginger, pressed garlic and coconut milk. Submerge tempeh slices completely and marinate in the fridge for 3 hours.

Smoker Preparation

15 Min.

Heat smoker to 120-130°C. Use hickory chips dry, optionally add a piece of dried coconut shell as a natural flavor enhancer.

Smoking

90 Min.

Place tempeh slices on perforated aluminum foil or in a grill basket in the smoker. Smoke at 120-130°C for about 90 minutes, turning after 45 minutes.

Finishing

5 Min.

Season smoked tempeh with fresh coriander and lime juice. Serve with jasmine rice and peanut sauce.

Pro Tip

A splash of coconut milk in the marinade creates a caramel-like crust and intensifies the Indonesian aroma during smoking.
