Smoked Salsa Verde – Smoked Tomatillo Salsa

Mexican green salsa with smoked tomatillos, jalapeños, and fresh cilantro delivering an intense smoky flavor.

Preparation
10 MinutenRemove the papery husks from tomatillos and rinse under cold water. Halve jalapeños and onion. Leave garlic cloves unpeeled.
Smoking
30 MinutenSmoke tomatillos, jalapeños, onion, and garlic in the smoker at 180–200°C with hickory wood chips for 25–30 minutes until tomatillos are soft and lightly browned.
Blending
5 MinutenAdd all smoked ingredients (peel garlic) together with cilantro, lime juice, and salt to a blender and process to a slightly chunky salsa. Do not over-blend.
Seasoning
5 MinutenAdjust salsa with salt and lime juice. Let rest for at least 15 minutes to allow the flavors to meld. Serve chilled or as a dip at room temperature.
Pro Tip
Mesquite or hickory wood chips intensify the smoky flavor. For a milder salsa, halve the jalapeño amount or remove the seeds.
