Smoked Pizza Dough

Classic pizza dough that is pre-cooked in the smoker and takes on a distinctive smoky flavor.

Ingredients(for 0.5 kg)

Wheat flour type 00350 g
Fresh yeast10 g
Olive oil20 ml
Salt8 g
Lukewarm water210 ml

Instructions

Make dough

Dissolve yeast in lukewarm water, then knead with flour, salt and olive oil into a smooth dough. Let the dough rest covered for at least 2 hours in the fridge.

Rolling

10 Min.

Divide the dough into two equal portions and roll out very thin to approx. 3 mm on a floured surface.

Prepare smoker

20 Min.

Heat smoker with pizza stone to 250-270°C and add cherry wood chips. Preheat the stone for at least 20 minutes.

Smoking

8-12 Min.

Place the dough pieces on the hot pizza stone and smoke with the lid closed for 8-12 minutes until the dough is bubbly and lightly browned.

Pro Tip

Roll the dough very thin and smoke directly on the hot pizza stone for maximum smoky flavor.
