Mixed Forest Mushrooms (Porcini, Chanterelle, King Oyster)700 g
Butter50 g
Garlic15 g
Fresh Thyme10 g
Sea Salt and Black Pepper8 g

Preparation

15 Min.

Clean mushrooms dry and halve or quarter depending on size. Roughly chop garlic. Combine all mushrooms in a cast iron pan with butter, garlic and thyme.

Preheat Smoker

15 Min.

Preheat smoker with beech and oak wood to 120-130°C. Place the pan with mushrooms into the smoker.

Smoking

45-60 Min.

Smoke mushrooms at 120-130°C for about 45-60 minutes. Stir once halfway through. Season with salt and pepper to taste.

Serving

5 Min.

Serve the forest mushroom mix directly from the pan. Pairs excellently with toasted bread, polenta or as a side dish to vegetarian main courses.

Pro Tip

Use a cast iron pan in the smoker so the mushrooms cook in their own juices and butter, ensuring no flavor is lost.
