Smoked Cornbread

Juicy American cornbread with a smoky note, baked directly in a cast iron pot in the smoker.
Ingredients(for 0.5 kg)
Instructions
Prepare smoker and pan
20 Min.Preheat smoker to 180-200°C and add apple or cherry wood. Grease a cast iron pan with some butter and place it in the smoker to preheat.
Mix batter
5 Min.Mix cornmeal, baking powder and salt. Whisk buttermilk, eggs and melted butter separately, then quickly combine everything into a smooth batter.
Baking in the smoker
35-45 Min.Pour batter into the hot cast iron pan and bake in the smoker at 180-200°C for about 35-45 minutes until a toothpick comes out clean.
Cooling and serving
10 Min.Let cornbread cool briefly in the pan, cut into pieces and serve warm. Goes excellently with salted butter.
Pro Tip
Preheat the cast iron pan in the smoker so the bottom of the cornbread immediately develops a roasted crust.
