Aromatic Italian spice blend with fennel seeds and chilli for flavourful, rustic salsiccia sausages made from coarsely ground pork.

Toasting
5 MinutenToast fennel seeds in a dry pan over medium heat for 2-3 minutes, stirring constantly, until fragrant. Allow to cool completely.

Grinding
3 MinutenGrind the cooled fennel seeds together with the rosemary coarsely in a mortar or spice grinder.

Mixing and Storing
3 MinutenMix all ingredients thoroughly in a bowl, then transfer to an airtight jar. Store in a cool, dark place for up to 4 months.
Pro Tip
Briefly toast the fennel seeds in a dry pan over medium heat before grinding – this greatly intensifies their aroma.
