Mediterranean-inspired smoked butter with fresh rosemary and lemon zest, ideal for finishing grilled vegetables or fresh baguette.

Unsalted butter250 g
Fresh rosemary finely chopped8 g
Organic lemon zest5 g
Garlic clove finely grated4 g
Fleur de sel4 g

Instructions

Prepare herb butter

12 Std.

Thoroughly mix softened butter with finely chopped rosemary, lemon zest and grated garlic, season with fleur de sel and let it infuse overnight in the refrigerator.

Prepare smoker

15 Min.

Fill smoker with cold smoke generator and lemon wood or apple wood chips, cool to a maximum of 22°C, and place an ice tray under the grate.

Smoking

1-2 Std.

Cold smoke the herb butter in a flat dish for 1 to 2 hours, stirring once halfway through to achieve an even smoke flavor throughout.

Shaping and chilling

3 Std.

Place smoked butter on plastic wrap, shape into a firm log and let it set in the refrigerator for at least 3 hours, then serve in slices.

Pro Tip

Lemon wood smoking chips wonderfully enhance the citrus aroma and pair perfectly with rosemary; apple wood also works very well as an alternative.
