Seasoning and Shaping the Ground Meat
20 minutes + 2 hours resting timeThoroughly knead all spices into the ground beef until a homogeneous mixture forms. Allow the seasoned ground meat to rest in the refrigerator for 2 hours. Then shape into uniform rolls of approximately 150-200 g.
Preparing the Smoker
30 minutesPreheat smoker to 120-135 °C. Soak beech and apple wood chips in a 1:1 ratio. Thread the shaped Kofta rolls onto lightly oiled metal skewers or arrange on a grill rack.
Smoking and Cooking
2-3 hoursPlace the Kofta skewers in the preheated smoker. Smoke at 120-135 °C until a core temperature of 72-75 °C is reached. Turn the skewers once halfway through the cooking time for even browning.
Pro Tip
Use high-quality blended ground beef with a fat content of 20-25%, as lean ground meat dries out when smoking. Briefly freezing the Kofta rolls before smoking helps them maintain their shape.
