Smoked Cheese Sauce for Burgers

A velvety smoked cheese sauce based on smoked cheddar that takes any burger to the next level.

3 Min.Finely grate smoked cheddar. Heat milk in a small saucepan over medium heat but do not let it boil.
Dissolve Sodium Citrate
2 Min.Stir sodium citrate into the warm milk until completely dissolved. Reduce heat to low.
Melt Cheese
8 Min.Melt grated cheddar in three portions while stirring constantly until a smooth homogeneous sauce forms.
Season
3 Min.Stir in mustard and smoked paprika, season with salt and adjust consistency with a little milk.
Serve
2 Min.Pour sauce directly warm over the finished burger or serve in a small bowl for dipping.
