Smoked Cheddar250 g
Whole Milk150 ml
Sodium Citrate8 g
Medium Hot Mustard10 g
Smoked Paprika3 g

Finely grate smoked cheddar. Heat milk in a small saucepan over medium heat but do not let it boil.

Dissolve Sodium Citrate

Stir sodium citrate into the warm milk until completely dissolved. Reduce heat to low.

Melt grated cheddar in three portions while stirring constantly until a smooth homogeneous sauce forms.

Stir in mustard and smoked paprika, season with salt and adjust consistency with a little milk.
