Instructions

1

Rendering Bacon

15 Minuten

Dice the bacon into small cubes and render crispy in a heavy pot or cast iron pan over medium heat. Remove bacon, leaving about 2 tbsp of fat in the pot.

2

Sautéing Onions and Garlic

15 Minuten

Slice onions thinly and finely chop garlic, sauté in the bacon fat over medium heat for 15 minutes until soft and golden brown.

3

Deglazing and Seasoning

5 Minuten

Deglaze with bourbon and let reduce for 2 minutes. Then add brown sugar, maple syrup, apple cider vinegar and coffee, stirring everything well.

4

Simmering

30 Minuten

Return the rendered bacon to the pot and simmer everything uncovered over low heat for 30 minutes until the mixture is dark, caramelized and syrupy.

5

Chopping and Filling

5 Minuten

Briefly blend the mixture coarsely with an immersion blender or chop with a knife for a chunky texture, then fill into sterilized jars.

Pro Tip

For maximum smoky depth, pre-smoke the bacon for 20 minutes at 100°C in the smoker with hickory wood before rendering it in the pan.
