Smoky Bacon Jam

An intensely smoky and sweet bacon jam with bourbon and maple syrup that elevates any burger or toast to the next level.
Ingredients(for 0.5 kg)
Instructions
Rendering Bacon
15 MinutenDice the bacon into small cubes and render crispy in a heavy pot or cast iron pan over medium heat. Remove bacon, leaving about 2 tbsp of fat in the pot.
Sautéing Onions and Garlic
15 MinutenSlice onions thinly and finely chop garlic, sauté in the bacon fat over medium heat for 15 minutes until soft and golden brown.
Deglazing and Seasoning
5 MinutenDeglaze with bourbon and let reduce for 2 minutes. Then add brown sugar, maple syrup, apple cider vinegar and coffee, stirring everything well.
Simmering
30 MinutenReturn the rendered bacon to the pot and simmer everything uncovered over low heat for 30 minutes until the mixture is dark, caramelized and syrupy.
Chopping and Filling
5 MinutenBriefly blend the mixture coarsely with an immersion blender or chop with a knife for a chunky texture, then fill into sterilized jars.
Pro Tip
For maximum smoky depth, pre-smoke the bacon for 20 minutes at 100°C in the smoker with hickory wood before rendering it in the pan.
