Unsalted butter250 g
Garlic cloves4 Stück
Fresh rosemary5 g
Fresh thyme5 g
Sea salt4 g
Alder and apple wood chips100 g

Instructions

Smoking the garlic

1 Std.

Place unpeeled garlic cloves in the smoker preheated to 110°C with alder and apple wood chips and hot smoke for 1 hour until soft and golden brown. Let cool completely afterward.

Butter preparation

2 Std.

Let butter soften at room temperature for 2 hours. Peel the smoked garlic and chop finely. Strip rosemary and thyme from stems and chop finely.

Cold smoking the butter

2-3 Std.

Let the smoker cool down to cold smoke temperature below 20°C. Place softened butter in a flat dish and cold smoke for 2 to 3 hours, stirring once halfway through.

Finishing

2 Std.

Thoroughly mix the smoked butter with chopped garlic, rosemary, thyme, and sea salt. Shape into a roll, wrap in baking paper, and refrigerate for at least 2 hours.

Pro Tip

Always mix in fresh herbs only after smoking, as they can turn bitter when exposed to smoke directly.
