Smoked Vanilla Sugar

White cane sugar is cold-smoked together with fresh vanilla pods, developing a unique aroma of sweet vanilla and mild wood smoke. This extraordinary sugar is excellent for baking, coffee specialties, or as a topping for crème brûlée. Cherry wood gives the sugar a delicate, fruity smoke nuance.

Preparation
10 minutesPour sugar into a shallow stainless steel dish or baking tray and distribute evenly (max. 1 cm layer depth). Slice vanilla pods lengthwise, scrape out the seeds, and distribute both pods and seeds over the sugar.
Cold Smoking
4–6 hoursKeep the smoker under 30 °C. Cold smoke the sugar with cherry wood for 4–6 hours. Stir thoroughly every 2 hours.
Post-processing
24 hoursRemove smoked sugar from the smoker, discard vanilla pods (can be kept for decoration), stir in a pinch of sea salt. Let rest uncovered at room temperature for 24 hours to allow the flavor to stabilize.
Bottling
5 minutesFill sugar into airtight jars. Keeps for several months when stored cool and dry.
Pro Tip
Stir the sugar every 2 hours so it smokes evenly and does not clump. The longer it smokes, the more intense the flavor – 4 hours is sufficient for a subtle result.
