Instructions

1

Preparation

15 minutes

Wash cherries, remove stems, and dry thoroughly with paper towels. Spread in a single layer on a wire rack.

2

Cold Smoking

3–4 hours

Keep the smoker below 25 °C. Cold smoke the cherries with beech and cherry wood for 3–4 hours. Turn them every hour.

3

Making the syrup

10 minutes

Bring sugar and water to a boil in a saucepan until sugar is fully dissolved. Remove from heat, stir in bourbon, vanilla extract, and cinnamon stick, then let cool.

4

Preserving & Maturing

At least 24 hours

Fill smoked cherries into sterilized jars, pour the cooled syrup over them, and let them infuse in the refrigerator for at least 24 hours.

Pro Tip

Spread the cherries in a single layer on a wire rack so smoke can penetrate evenly. Do not pit them – the stone releases additional flavor during preserving.
