Smoked Cocktail Cherries

Fresh sweet cherries are cold-smoked and then preserved in an aromatic syrup. The smoke gives the cherries a deep, complex note, perfect for cocktails and desserts. Beech and cherry wood provide a mild, fruity smoke flavor.

Preparation
15 minutesWash cherries, remove stems, and dry thoroughly with paper towels. Spread in a single layer on a wire rack.
Cold Smoking
3–4 hoursKeep the smoker below 25 °C. Cold smoke the cherries with beech and cherry wood for 3–4 hours. Turn them every hour.
Making the syrup
10 minutesBring sugar and water to a boil in a saucepan until sugar is fully dissolved. Remove from heat, stir in bourbon, vanilla extract, and cinnamon stick, then let cool.
Preserving & Maturing
At least 24 hoursFill smoked cherries into sterilized jars, pour the cooled syrup over them, and let them infuse in the refrigerator for at least 24 hours.
Pro Tip
Spread the cherries in a single layer on a wire rack so smoke can penetrate evenly. Do not pit them – the stone releases additional flavor during preserving.
