Ingredients(for 1 kg)

Sweet cream butter500 g
Fleur de sel8 g
Vanilla pod1 Stück
Powdered sugar20 g
Organic orange zest5 g

Instructions

Preparation

30 minutes

Bring butter to room temperature and cut into 1.5 cm thick slices. Lay them side by side on a clean wire rack.

Cold Smoking

1–2 hours

Cool the smoker to under 15 °C. Cold smoke the butter with apple wood for 1–2 hours. Make sure the butter does not melt.

Refining & Shaping

15 minutes

Place smoked butter in a bowl and knead thoroughly with fleur de sel, scraped vanilla seeds, powdered sugar, and orange zest. Shape into a roll on plastic wrap and wrap tightly.

Chilling & Storing

2 hours

Let the shaped butter roll firm up in the refrigerator for at least 2 hours. Keeps refrigerated for up to 2 weeks, frozen for up to 3 months.

Pro Tip

Bring the butter to room temperature before smoking and smoke it in thin slices – this way it absorbs the smoke flavor much faster and more evenly than a whole block.
