Smoked Butter for Desserts

High-quality sweet cream butter is cold-smoked and refined with sea salt and vanilla into an exclusive dessert butter. Preparation
30 minutesBring butter to room temperature and cut into 1.5 cm thick slices. Lay them side by side on a clean wire rack.
Cold Smoking
1–2 hoursCool the smoker to under 15 °C. Cold smoke the butter with apple wood for 1–2 hours. Make sure the butter does not melt.
Refining & Shaping
15 minutesPlace smoked butter in a bowl and knead thoroughly with fleur de sel, scraped vanilla seeds, powdered sugar, and orange zest. Shape into a roll on plastic wrap and wrap tightly.
Chilling & Storing
2 hoursLet the shaped butter roll firm up in the refrigerator for at least 2 hours. Keeps refrigerated for up to 2 weeks, frozen for up to 3 months.
Pro Tip
Bring the butter to room temperature before smoking and smoke it in thin slices – this way it absorbs the smoke flavor much faster and more evenly than a whole block.
