Firm tofu is marinated with Mediterranean herbs and olive oil, then hot-smoked for a flavorful and aromatic result.

Firm Tofu500 g
Olive Oil60 ml
Dried Rosemary5 g
Dried Thyme5 g
Garlic3 Zehen
Sea Salt8 g

Instructions

Preparation

30 Min.

Remove tofu from packaging, place between kitchen paper and press for at least 30 minutes. Then cut into even 1.5 cm thick slices.

Marinating

4 Std.

Mix olive oil, minced garlic, rosemary, thyme and sea salt in a bowl. Coat tofu slices completely with the marinade and refrigerate for at least 4 hours.

Smoker Preparation

20 Min.

Preheat smoker to 110-120°C. Soak apple and cherry wood chips for 30 minutes, drain and place in the smoking tray or box.

Smoking

2 Std.

Place tofu slices on the grill grate and smoke at a stable temperature for 2 hours. Turn once halfway through.

Resting and Serving

10 Min.

Remove tofu from smoker and let rest for 10 minutes. Serve warm or cold as a side dish, in salads or on antipasti platters.

Pro Tip

Press the tofu thoroughly before smoking to remove excess moisture so it absorbs smoke more effectively.
