Alder Smoked Salt Mild Scandinavian

Delicate Scandinavian smoked salt with mild alder aroma, especially harmonious with vegetables, cheese, and light dishes.

Preparation
10 Min.Spread fine sea salt evenly in a thin layer on a flat wire rack or baking dish. If desired, mix in dried dill for a Scandinavian herbal flavor.
Prepare alder wood
10 Min.Lightly moisten the alder wood chips with water and let them soak for 5 minutes. Then fill into the cold smoke generator or smoking spiral.
Smoking
3-4 Std.Keep smoker at a maximum of 20°C and place the salt dish inside. Cold smoke for 3 to 4 hours, gently stirring the salt once halfway through.
Cooling and storing
20 Min.Remove the finished smoked salt from the smoker, let it cool openly for 20 minutes, then fill into a clean jar. Store cool and dry, keeps for several months.
Pro Tip
Lightly moisten the alder chips before filling them into the cold smoke generator so they burn slower and cooler, preventing the salt from becoming bitter.
