Ground white pepper45 g
Freshly grated nutmeg20 g
Ground ginger20 g
Ground cloves10 g
Ground allspice5 g

Instructions

Grating nutmeg

Grate the nutmeg freshly on a fine grater or nutmeg grater and place the powder in a bowl. Freshly grated nutmeg is significantly more aromatic than pre-ground.

Mixing

Add white pepper, ginger, ground cloves and allspice to the freshly grated nutmeg in the bowl and mix all ingredients evenly with a spoon or small whisk.

Filling and Storage

2 Minuten

Fill the finished Quatre Épices blend into a dark, airtight screw-top jar, label it and store cool and protected from light. Shelf life approx. 6 months, after which the aroma fades.

Pro Tip

For the authentic French version, slightly reduce the clove amount and replace black pepper with white pepper – this creates a more elegant, less pungent profile that excels especially in charcuterie applications.
