Spicy-sweet turkey jerky with the distinctive heat of sriracha and a honey-like sweetness.

Ingredients(for 1 kg)

Turkey Breast1000 g
Sriracha Sauce50 ml
Honey40 g
Soy Sauce60 ml
Smoked Paprika8 g

Instructions

Preparation

15 Minuten

Remove skin, fat and tendons from turkey breast, briefly freeze and slice with the grain into 4-5 mm thin strips.

Marinade

5 Minuten

Thoroughly mix sriracha, honey, soy sauce and paprika until the honey is completely dissolved.

Marinating

8-12 Stunden

Add meat strips to the marinade, mix well, transfer to a zip bag and refrigerate for 8-12 hours.

Dehydrating

7-9 Stunden

Pat strips dry, arrange on dehydrator trays and dry at 70°C for 7-9 hours, rotating trays every 2 hours.

Cooling and Storing

30 Minuten

Allow jerky to cool completely on a rack, then store in airtight containers, keeps up to 2 weeks at room temperature.

Pro Tip

For extra heat, brush the finished jerky pieces with a mixture of cayenne pepper and a little honey and briefly re-dry.
