Fresh Hawaiian tuna poke with a savory soy-sesame marinade served in a rice bowl.

Ingredients(for 0.5 kg)

Sashimi-grade tuna400 g
Soy sauce60 ml
Toasted sesame oil20 ml
Rice vinegar15 ml
Fresh ginger grated10 g
Spring onions sliced into rings30 g
Toasted sesame seeds15 g
Cooked sushi rice300 g

Instructions

Prepare fish

Cut tuna into even cubes of approx. 2 cm edge length and place in a bowl.

Mix marinade

5 Min.

Thoroughly mix soy sauce, sesame oil, rice vinegar and grated ginger until a homogeneous marinade forms.

Marinating

20-30 Min.

Pour marinade over tuna, fold in spring onions and gently mix everything together. Cover and refrigerate for 20-30 minutes.

Assemble bowl

Arrange warm sushi rice in deep bowls, place the marinated poke tuna in the center and sprinkle with toasted sesame seeds.

Serve immediately, optionally garnish with avocado slices, cucumber, nori strips and a drizzle of sriracha.

Pro Tip

Use only sashimi-grade fish and marinate for a maximum of 30 minutes, otherwise the soy sauce makes it too salty and firm.
