Hearty portobello mushrooms are marinated in a savory soy sauce blend and slowly dehydrated. The result is a chewy, umami-rich jerky with deep salty flavor. Ideal as a protein-rich snack on the go.

Ingredients(for 1 kg)

Soy sauce120 ml
Garlic powder8 g
Ginger powder5 g
Rice vinegar30 ml
Sesame oil10 ml
Brown sugar15 g

Instructions

Preparation

15 minutes

Clean portobello mushrooms and slice into uniform 5 mm thick pieces.

Marinating

2-4 hours

Mix all marinade ingredients and fully submerge mushroom slices. Marinate covered in the refrigerator.

Dehydrating

6-8 hours

Drain mushroom slices, arrange on dehydrator trays and dehydrate at 70 °C until dry and slightly flexible.

Pro Tip

Briefly blanch mushrooms in boiling water beforehand to achieve a more uniform texture during dehydration.
