Boldly seasoned oyster mushrooms are gently dehydrated in the smoker, developing a chewy, meat-like jerky texture.

Ingredients(for 0.5 kg)

Oyster Mushrooms600 g
Soy Sauce80 ml
Worcestershire Sauce30 ml
Smoked Paprika Powder10 g
Cayenne Pepper3 g
Brown Sugar15 g

Preparation

1 Std.

Tear oyster mushrooms into even strips about 1 cm wide. Mix all marinade ingredients and marinate mushrooms for at least 1 hour.

Draining

10 Min.

Remove mushroom strips from marinade, let drain briefly and lay out on smoking racks or directly on the grate without overlapping.

Dehydrating in Smoker

3-4 Std.

Set smoker to 70-80°C and dehydrate mushroom strips with beech or alder wood for 3-4 hours until chewy and dry but still pliable.

Cooling and Storage

20 Min.

Allow finished mushroom jerky to cool completely at room temperature. Store in an airtight container – keeps for up to 2 weeks.

Pro Tip

Tear mushroom strips as evenly thick as possible so they dry uniformly – strips that are too thin will become too brittle.
