Aromatic dried peach halves, refined with fragrant lavender and a hint of honey. The slow dehydration concentrates the natural peach flavor and harmoniously combines it with the floral lavender notes. This delicacy is excellent as a snack, in granola, or as a side for cheese boards.

Ingredients(for 1 kg)

Peaches (halved, pitted)1000 g
Liquid honey40 g
Dried lavender5 g
Lemon juice30 ml
Lemon zest5 g
Raw cane sugar15 g

Preparation

20 min.

Wash peaches, halve and pit them. Rub cut surfaces with lemon juice to prevent oxidation. Pat halves dry with kitchen paper.

Marinating

15 min.

Brush honey evenly onto cut surfaces. Mix lavender, lemon zest and raw sugar, then sprinkle over the peaches. Allow to infuse for 15 minutes.

Dehydrating

14-20 hrs.

Place peach halves cut-side up in a single layer on dehydrator trays. Dry at 60-63 °C until halves are leathery and no longer sticky. Rotate trays halfway through.

Conditioning & Storing

24-48 hrs.

Place cooled halves in a loosely closed jar and condition for 1-2 days – shake daily to evenly distribute residual moisture. Then store airtight for up to 6 months.

Pro Tip

Use ripe but still firm peaches. Overly soft fruit will not hold its shape during drying. Place halves cut-side up on the trays.
