A sweet and smoky BBQ sauce made from ripe peaches and spicy chipotle chilies with a deep smoky undertone.

Ingredients(for 0.5 kg)

Peaches (ripe, peeled and diced)350 g
Chipotle chilies in adobo sauce30 g
Ketchup100 ml
Apple cider vinegar50 ml
Honey40 g
Onion (chopped)80 g
Dijon mustard15 g
Salt and black pepper5 g

Preparation

10 Minuten

Peel, pit and roughly dice the peaches. Finely chop the onion. Prepare the chipotle chilies from the can with some adobo sauce.

Sautéing

8 Minuten

Sauté onions in a saucepan with a little oil over medium heat until translucent. Add peaches and cook for another 5 minutes until soft.

Building the Sauce

20 Minuten

Add chipotle chilies, ketchup, apple cider vinegar, honey and Dijon mustard. Stir thoroughly and simmer over low heat for 20 minutes.

Finishing

5 Minuten

Blend the sauce creamy with an immersion blender, season with salt and pepper and reduce or thin to the desired consistency.

Pro Tip

Use canned chipotle chilies in adobo sauce – this gives the sauce an especially intense smoky flavor without additional smoking.
