A fiery, intensely spicy rub in the style of legendary Nashville Hot Chicken, featuring bold cayenne and smoky paprika – perfect for chicken but also great on pork.

Smoked paprika powder20 g
Brown sugar18 g
Salt10 g
Garlic granules10 g
Ground black pepper8 g

Chili flakes4 g

Weigh ingredients

Weigh all ingredients individually into a dry bowl. Handle cayenne carefully – wash hands and avoid touching eyes.

Grind and Mix

Coarsely grind chili flakes in a mortar, then mix all spices together until a homogeneous blend is achieved.

Transfer to an airtight jar, label well (spicy warning recommended), and store cool and dry. Shelf life approximately 6 months.

Pro Tip

For an authentic Nashville effect, stir 2 tbsp of the rub with 4 tbsp melted clarified butter and brush the finished cooked meat with it.
