A spicy and tangy Carolina-style mop sauce with mustard and cayenne, ideal for pulled pork and spare ribs.

Yellow mustard120 g
White wine vinegar200 ml
Apple cider vinegar100 ml
Worcestershire sauce30 ml
Cayenne pepper5 g
Black pepper ground5 g
Salt8 g
Brown sugar20 g

Instructions

Preparation

Measure all ingredients. Preheat a small saucepan over medium heat.

Combine vinegar and mustard

Add white wine vinegar and apple cider vinegar to the pot, then whisk in the yellow mustard until smooth.

Seasoning

Stir in Worcestershire sauce, cayenne pepper, black pepper, salt, and brown sugar until everything is fully incorporated.

Simmer the sauce over low heat for 8-10 minutes, stirring occasionally, until slightly thickened.

Remove the sauce from heat, taste and adjust seasoning with cayenne or salt if needed. Use warm.
