A creamy Japanese-inspired glaze with white miso and salted butter that lends a deep umami flavor to any grilled food.

Ingredients(for 0.5 kg)

White Miso (Shiro Miso)150 g
Salted Butter120 g
Mirin80 ml
Sake60 ml
Brown Sugar40 g
Sesame Oil20 ml
Fresh Ginger, grated10 g

Instructions

Reducing Alcohol

4 Minuten

Bring mirin and sake to a boil in a small saucepan over medium heat and reduce for 3 minutes to cook off the alcohol.

Incorporating Miso

3 Minuten

Reduce heat, stir in miso and brown sugar until smooth and the sugar is completely dissolved.

Mounting Butter

4 Minuten

Remove from heat and whisk in cold butter in small pieces until a smooth, creamy emulsion forms.

Finishing

2 Minuten

Stir in sesame oil and freshly grated ginger, adjust seasoning and use lukewarm. Keeps in the refrigerator for up to 1 week.

Pro Tip

Shiro Miso (white miso) is milder than red miso and is particularly suitable for fish and seafood.
