Miso Butter Glaze

A creamy Japanese-inspired glaze with white miso and salted butter that lends a deep umami flavor to any grilled food.

Instructions
Reducing Alcohol
4 MinutenBring mirin and sake to a boil in a small saucepan over medium heat and reduce for 3 minutes to cook off the alcohol.
Incorporating Miso
3 MinutenReduce heat, stir in miso and brown sugar until smooth and the sugar is completely dissolved.
Mounting Butter
4 MinutenRemove from heat and whisk in cold butter in small pieces until a smooth, creamy emulsion forms.
Finishing
2 MinutenStir in sesame oil and freshly grated ginger, adjust seasoning and use lukewarm. Keeps in the refrigerator for up to 1 week.
Pro Tip
Shiro Miso (white miso) is milder than red miso and is particularly suitable for fish and seafood.
