A smoky and fiery Mexican adobo marinade with chipotle chilies and fresh lime for an intense BBQ experience.

Ingredients(for 0.5 kg)

Chipotle chilies in adobo sauce80 g
Freshly squeezed lime juice100 ml
Olive oil120 ml
Garlic20 g
Smoked paprika powder10 g
Ground cumin6 g
Salt8 g
Apple cider vinegar40 ml

Instructions

Prepare chipotle

Remove chipotle chilies from the can and roughly chop. Keep the adobo sauce from the can as well and add it to the marinade – it contributes to the full smoky flavor.

Blend ingredients

Add chipotle chilies, garlic, lime juice, apple cider vinegar, smoked paprika and cumin into a blender or immersion blender cup and blend to a smooth paste.

Incorporate oil

With the blender running, slowly drizzle in the olive oil to create an emulsified, creamy marinade. Season with salt to taste.

Marinate

4 Stunden (Ruhezeit)

Generously rub meat with the adobo marinade and place in a sealable bag. Marinate in the refrigerator for at least 4 hours or overnight.

Grill

10 Minuten

Remove meat from marinade and lightly shake off excess. Grill over medium to high heat, occasionally basting with remaining marinade.

Pro Tip

Chipotle chilies from the can (packed in adobo sauce) are the key to the authentic smoky flavor. For a milder version, remove the seeds from the chilies before processing.
