Dutch Style Matjes Mildly Salted

Traditional Dutch matjes herring, lightly salted and marinated for a mild, creamy flavor.

Preparation
15 Min.Rinse herrings thoroughly under cold water, pat dry and place side by side in a flat dish.
Prepare brine
10 Min.Combine sea salt, sugar, bay leaves, pepper and apple cider vinegar with 500 ml cold water and stir until salt and sugar dissolve.
Marinating
48-72 Std.Cover herrings completely with the cold brine, cover and refrigerate at 2-4°C.
Ripeness check
5 Min.After 48 hours, check: the fish flesh should be creamy-soft and evenly colored, no raw appearance remaining.
Serving
10 Min.Serve matjes cold with fresh onions, cream or on dark bread. Keeps refrigerated for up to 5 days.
