Traditional Dutch matjes herring, lightly salted and marinated for a mild, creamy flavor.

Ingredients(for 0.5 kg)

Fresh herrings (gutted)1000 g
Sea salt80 g
Sugar20 g
Bay leaf3 Stueck
Whole white pepper10 g
Apple cider vinegar50 ml

Preparation

15 Min.

Rinse herrings thoroughly under cold water, pat dry and place side by side in a flat dish.

Prepare brine

10 Min.

Combine sea salt, sugar, bay leaves, pepper and apple cider vinegar with 500 ml cold water and stir until salt and sugar dissolve.

Marinating

48-72 Std.

Cover herrings completely with the cold brine, cover and refrigerate at 2-4°C.

Ripeness check

5 Min.

After 48 hours, check: the fish flesh should be creamy-soft and evenly colored, no raw appearance remaining.

Serving

10 Min.

Serve matjes cold with fresh onions, cream or on dark bread. Keeps refrigerated for up to 5 days.
