Fresh prawns in an aromatic lime, coriander and garlic marinade that gives this seafood dish a vibrant, citrus-fresh character.

Ingredients(for 0.5 kg)

Fresh prawns (kitchen-ready)500 g
Fresh lime juice80 ml
Garlic cloves4 Stk.
Fresh coriander30 g
Extra virgin olive oil60 ml
Red chilli pepper1 Stk.
Sea salt8 g
Lime zest5 g

Preparation

15 Min.

Peel prawns, remove the vein, rinse under cold water and pat thoroughly dry. Finely chop garlic, deseed chilli and cut into thin rings, roughly chop coriander.

Prepare marinade

10 Min.

Mix lime juice, lime zest, olive oil, garlic, chilli, coriander and sea salt thoroughly in a bowl and let the marinade rest for 5 minutes to allow the flavours to combine.

Marinating

1-2 Std.

Add prawns to the marinade, mix carefully so all prawns are evenly coated. Cover and marinate in the refrigerator for 1-2 hours, turning once after 30 minutes.

Plating

5 Min.

Remove prawns from the marinade and arrange on a plate. Garnish with fresh coriander leaves and lime slices. Drizzle the remaining marinade as a dressing over the top.

Pro Tip

Do not leave the prawns in the lime marinade for more than 2 hours, as the acids will denature the proteins and the prawns will develop an overly firm, mealy texture – similar to the ceviche effect.
