Mango Fruit Leather

Mango fruit leather is a sweet, chewy fruit snack made from pureed mango, gently dried in a dehydrator. The natural sweetness of the mango concentrates during drying, resulting in an intensely fruity product. Ideal as a healthy on-the-go snack.

Preparation
15 min.Peel, pit, and roughly dice the mangoes. Blend with lime juice, honey, and ground ginger until completely smooth.
Spreading
10 min.Spread the puree evenly about 4-5 mm thick onto lightly greased dehydrator sheets or parchment paper. Leave the edges slightly thicker as they dry faster.
Drying
8-10 hrs.Dehydrate at 60-65 °C until the leather is no longer sticky and feels pliable. It should peel cleanly from the sheet.
Cooling and Storage
30 min.Allow the finished mango leather to cool completely, cut into strips, and store in airtight containers at room temperature for up to 2 weeks or in the refrigerator for up to one month.
Pro Tip
Lightly grease the dehydrator sheet or parchment paper with coconut oil so the leather peels off easily after drying.
