An aromatic Middle Eastern spice blend perfect for smoked lamb. The combination of cumin, cinnamon, and cardamom gives the meat a deep, warm flavor. Ideal for leg or shoulder of lamb.

Ground cumin15 g
Sweet paprika12 g
Ground cinnamon5 g
Ground cardamom4 g
Turmeric4 g
Ground black pepper5 g

Instructions

Preparation

15 minutes + 12 hours chilling

Mix all spices thoroughly. Pat the lamb dry and generously rub with the spice blend, working it into crevices and folds. Cover and rest in the refrigerator.

Smoking

6-8 hours

Set the smoker to 110-125 °C and add cherry and apple wood. Smoke the meat indirectly until a core temperature of 88-92 °C is reached.

Resting

20-30 minutes

Wrap the meat in aluminum foil and rest for 20-30 minutes so the juices redistribute evenly. Then slice thinly and serve.

Pro Tip

Mix a splash of lemon juice and a little olive oil into the spice blend for better adhesion and flavor development.
