A Nordic-inspired dry blend with juniper, dill and mustard, perfectly suited to salmon, Arctic char or other fatty cold-water fish.

Dried Dill25 g
Ground Juniper Berries15 g
Coarse Sea Salt20 g
Brown Sugar10 g
Ground Yellow Mustard Seeds10 g
Ground White Pepper10 g
Dried Lemon Zest10 g

Instructions

Mixing

Combine all dry ingredients in a bowl and stir thoroughly until a uniform blend is achieved.

Grinding

3 Minuten

Lightly crush the blend in portions using a mortar to release the juniper aromas and refine the texture. Do not grind too finely – some texture is desirable.

Storing

2 Minuten

Fill the finished blend into an airtight jar, label it and store cool and protected from light. Shelf life up to 4 months.

Pro Tip

Freshly crush juniper berries in a mortar instead of using pre-ground powder – this delivers significantly more aroma and a more intense Nordic flavour profile.
