Dried Herbes de Provence Mix

A classic southern French herb blend that develops its full aroma through gentle drying. The combination of lavender, thyme, and rosemary creates an intense, floral seasoning. Ideal for Mediterranean dishes, grill marinades, and herb butter.

Preparation
20–30 min.Wash all fresh herbs under cold water and thoroughly pat or spin dry with a kitchen towel or salad spinner. Remove any wilted or brown parts. Rosemary and thyme sprigs can be left whole; pluck oregano and marjoram leaves from their stems.
Arranging
10 min.Spread the herbs evenly in a single layer on the dehydrator trays to allow good air circulation. Place different herbs on separate trays, as their drying times may vary.
Drying
6–10 hrs.Set the dehydrator to 38–42 °C and dry the herbs for 6–10 hours. Check every 2 hours and rotate trays if necessary. The herbs are done when completely dry, crisp, and brittle.
Mixing and Storing
10 min.Coarsely crumble the dried herbs between your hands and mix well in a bowl. Fill into clean, airtight jars, label them, and store in a cool, dark place.
