Refreshing dried kiwi slices with a hint of fresh mint, perfect as a light snack or topping. The kiwis are refined with mint sugar and gently dehydrated to preserve their vibrant green color. The intense natural flavor of the kiwi is wonderfully complemented by the mint.

Ingredients(for 1 kg)

Kiwis (peeled)1000 g
Fresh mint leaves15 g
Powdered sugar25 g
Lime juice20 ml

Instructions

Preparation

15 min.

Peel kiwis and slice into 4-5 mm thick rounds. Finely chop mint leaves and mix with powdered sugar to create mint sugar.

Seasoning

5 min.

Drizzle kiwi slices with lime juice, then evenly sprinkle with the mint sugar. Let sit briefly for 5 minutes.

Dehydrating

10-14 hrs.

Distribute kiwi slices in a single layer on trays lined with dehydrator sheets. Dry at 57-60 °C until slices are leathery-dry but still slightly flexible.

Cooling & Storing

20 min.

Allow dried slices to cool completely. Store in an airtight container in a cool, dark place for up to 3 weeks.

Pro Tip

Place kiwi slices on dehydrator sheets or parchment paper as they can stick. Do not cut slices thicker than 5 mm.
