Kiwi Chips

Kiwi chips are paper-thin, crispy fruit slices with a pleasant tart-sweet flavor. The vibrant green color is largely preserved during drying, making them a visually appealing snack. They are great as a garnish for desserts or as a vitamin-rich nibble.

Preparation
15 min.Peel kiwis and slice into uniform 3-4 mm rounds using a sharp knife or mandoline. Briefly toss slices in lemon juice and drain on paper towels.
Optional Seasoning
5 min.For a sweeter version, lightly dust the slices with a mixture of powdered sugar and vanilla sugar. Skip this step for a natural version.
Drying
6-10 hrs.Arrange kiwi slices in a single layer without overlapping on dehydrator trays. Dry at 55-60 °C until the chips are completely dry and crispy. Flip once after 4 hours.
Storage
20 min. cooling timeAllow chips to cool completely on a rack – they become crispier as they cool. Store in an airtight container at room temperature for up to 3 weeks.
Pro Tip
Underripe, firm kiwis are better for dehydrating than very ripe fruit as they contain less moisture and dry more evenly. A thickness of maximum 3 mm results in crispy chips.
