This unique jerky combines the classic flavors of an everything bagel – sesame, poppy seeds, onion, garlic and sea salt – with tender dried beef. The spice crust provides a wonderfully crunchy texture and a nutty, savory taste. An absolute showstopper on any snack board.

Ingredients(for 1 kg)

Soy sauce50 ml
Worcestershire sauce20 ml
Sesame seeds15 g
Poppy seeds8 g
Dried onion flakes10 g
Garlic flakes8 g
Coarse sea salt6 g

Instructions

Preparation

15 minutes

Partially freeze beef (top round or sirloin) and slice into even 3-4 mm strips with the grain for a chewier texture.

Marinating

6 hours

Mix soy sauce and Worcestershire sauce. Submerge meat strips and marinate for 6 hours in the refrigerator. Pat dry but not completely – slight moisture helps the seeds adhere.

Spice Crust

10 minutes

Mix sesame seeds, poppy seeds, onion flakes, garlic flakes and sea salt. Roll each meat strip in the mixture and press gently so the spices adhere well.

Dehydrating

5-7 hours

Arrange strips on dehydrator trays without overlapping. Dehydrate at 70-75 °C for 5-7 hours until jerky is pliable but dry. Do not flip to preserve the spice crust.

Pro Tip

Apply the spice mix only after marinating – this way sesame and poppy seeds adhere better to the slightly sticky meat and won't get soggy during the long marinating time.
