Classic Japanese teriyaki glaze with mirin and sake, perfect for glazing yakitori skewers.

Ingredients(for 0.5 kg)

Soy Sauce200 ml
Mirin150 ml
Sake100 ml
Sugar60 g
Garlic, crushed15 g
Ginger, sliced15 g

Instructions

Combine Ingredients

Combine soy sauce, mirin, sake and sugar in a small saucepan and stir well until the sugar begins to dissolve.

Infuse Flavors

5 Minuten

Add crushed garlic and ginger slices, place pot over medium heat and bring to a boil.

Reduce

15 Minuten

Reduce heat and simmer the sauce for 15 minutes on low heat until reduced by about one third and slightly syrupy.

Strain and Bottle

2 Minuten

Strain the sauce through a fine mesh sieve to remove garlic and ginger, then pour into sterilized bottles.

Pro Tip

The sauce keeps in the refrigerator for up to 4 weeks and thickens further upon cooling – dilute with a little water if needed.
