Japanese Togarashi Chili Sesame Rub

A spicy Japanese rub made from chili, sesame and nori, perfect for chicken skewers, tuna, salmon and tender pork.
Ingredients(for 0.1 kg)
White sesame seeds25 g
Black sesame seeds15 g
Red chili flakes (Togarashi)20 g
Nori seaweed (dried, finely ground)15 g
Ginger powder10 g
Garlic powder10 g
Orange peel powder5 g
Instructions

Toasting Sesame
5 MinutenToast white and black sesame seeds separately in a dry pan over medium heat for 2–3 minutes until golden, stirring constantly. Allow to cool.

Grinding Nori
2 MinutenGrind dried nori sheets in a mortar or spice grinder to a fine powder.

Mixing and Filling
2 MinutenThoroughly combine all ingredients in a bowl, transfer to an airtight jar and store in a cool, dark place.
Pro Tip
Toast white and black sesame seeds separately as they have different roasting times, then combine to avoid burning.
