Ingredients(for 1 kg)

Soy sauce50 ml
Honey40 g
Apple cider vinegar20 ml
Chipotle powder8 g
Garlic powder5 g
Salt7 g
Black pepper4 g

Instructions

Preparation

20 min + 8-12 hrs marinating

Slice beef into 3-4 mm strips against the grain. Whisk all marinade ingredients together in a bowl until smooth. Add strips to the marinade, massage thoroughly, cover, and refrigerate for at least 8 hours.

Draining & Preparation

15 min

Remove strips from marinade and place on a wire rack over a baking sheet to drain. Pat dry with paper towels. Since honey caramelizes quickly, thorough drying is especially important.

Dehydrating

6-8 hrs

Arrange strips on dehydrator trays. Set dehydrator to 70 °C and dry for 6-8 hours. Flip strips after 4 hours. Jerky is ready when it tears slightly but does not break when gently bent.

Cooling & Storage

30 min

Allow finished jerky to cool completely at room temperature. Store in airtight containers or vacuum-sealed bags. Keeps up to 2 weeks at room temperature or up to one month in the refrigerator.

Pro Tip

Chipotle chilies in adobo sauce from a can give a more intense smoky flavor than plain chipotle powder. Simply chop finely and use with the adobo sauce.
