Honey Garlic Chicken Wings

These sweet and savory chicken wings combine the aroma of roasted garlic with the caramelized taste of honey. Smoking over apple wood gives the wings a mild fruity note that wonderfully complements the glaze. The perfect combination for those who prefer a sweeter, less spicy variant.

Preparation
10 min + 30 min restPat wings dry and separate at the joints. Rub evenly with salt, pepper and garlic powder. Let rest on a wire rack at room temperature for 30 minutes. Stir honey, soy sauce, finely grated fresh garlic and rice vinegar into a smooth glaze.
Smoking
1.5-1.75 hoursSet smoker to 115-130 °C and use apple and alder wood chips. Place wings on the grate and smoke to an internal temperature of 75 °C. Flip once after 45 minutes.
Glazing and Finishing
20 minutesOnce the internal temperature reaches 75 °C, brush the glaze evenly on all sides. Increase temperature to 135-140 °C and let the wings glaze for another 15-20 minutes until the internal temperature reaches 82-85 °C and the glaze is nicely sticky. Re-glaze every 5 minutes.
Pro Tip
Finely grate the fresh garlic in the glaze instead of pressing it – this way it distributes more evenly and caramelizes more beautifully without burning.
