Greek Souvlaki Marinade Lemon-Oregano

A classic Greek marinade with fresh lemon juice and oregano that tenderizes meat and adds aromatic flavor.

Instructions
Prepare garlic
3 MinutenPeel garlic cloves and finely chop or press through a garlic press. The finer the garlic, the more evenly the aroma distributes throughout the marinade.
Mix marinade
3 MinutenThoroughly mix olive oil, fresh lemon juice, chopped garlic, oregano, rosemary, salt and pepper in a bowl until everything is well combined.
Marinate meat
4 Stunden (Ruhezeit)Place meat cubes in a zip bag or shallow dish, pour marinade over and mix well. Cover and refrigerate for at least 4 hours.
Skewer and grill
10 MinutenRemove meat from marinade, let drain and thread onto wooden skewers. Grill over direct heat until golden brown on all sides.
Pro Tip
Freshly squeezed lemon juice is essential – bottled juice adds a bitter note. A little lemon zest intensifies the aroma even further.
