A deep ruby-red, fruity-tart glaze based on pomegranate molasses that gives lamb and poultry an elegant Middle Eastern flavor.

Ingredients(for 0.5 kg)

Pomegranate Molasses200 ml
Pomegranate Juice150 ml
Honey60 g
Balsamic Vinegar50 ml
Fresh Ginger20 g
Cinnamon4 g
Black Pepper3 g

Instructions

Preparing Ginger

Peel the fresh ginger and finely grate it or press it through a garlic press.

Creating the Base

Combine pomegranate molasses, pomegranate juice, honey, and balsamic vinegar in a saucepan over medium heat and warm to 70°C.

Seasoning

2 Minuten

Stir in grated ginger, cinnamon, and black pepper and mix everything together well.

Reducing

15 Minuten

Simmer the glaze over low to medium heat, stirring occasionally, until it reaches the consistency of liquid caramel and reduces to approximately 500 ml.

Bottling

5 Minuten

Remove the finished glaze from the heat, let it cool briefly, taste and adjust, then transfer to a sterilized jar or bottle.

Pro Tip

Scatter fresh pomegranate seeds over the meat after grilling for extra freshness and an impressive visual effect.
